25 Days of Christmas Photo Challenge: Treats

Every Christmas I make candy for a few special people and friends.  I think I have more fun making it than they do eating it!  This year I made cake pops, incredibles, and plan to make white chocolate peppermint bark today - recipes to follow:

Cake Pops
I have always had a fear of making cake pops, but with this tutorial from "Divas Can Cook"...they turned out to be the easiest and (by far) most attractive candy I made!  The tutorial offers a video AND written recipe. Click here for more.

All you will need is:
cake mix of your choice (I chose confetti, she uses chocolate)
icing
white chocolate
cake pop sticks
styrofoam to allow them a place to harden
(and if you are giving them as gifts: bags and ribbon to tie)

Incredibles
I am a sucker for anything containing graham crackers...so these are a fav!

You will need:
3/4 cup butter, melted
2 cups graham crackers
12 oz. chunky peanut butter
2 cups powdered sugar
1 bag chocolate chips, melted

Combine butter and cracker crumbs.  Mix in peanut butter and powdered sugar.  Spread in cake pan or freeze in balls (I froze mine in balls).  Pour melted chocolate chips over mixture and spread or dip balls in melted mixture.  Place in refrigerator until chocolate hardens.

White Chocolate Bark
I ALWAYS have to make this too easy and delicious!

You will need:
12 large candy canes
2 lb white chocolate, chopped into 1/2 inch pieces
1/2 teaspoon peppermint oil

Line an 11 by 17 baking sheet with parchment, and set aside.
In the top of a double boiler, melt white chocolate, stirring constantly.  With a chef's knife or meat tenderizer, cut or pound candy canes into 1/4 inch pieces.  Stir pieces and oil into melted chocolate, remove from heat and pour into prepared baking sheet.  Spread evenly and chill until firm (25-30 minutes).  Break into pieces and serve:)
Lasts up to a week in airtight container.
